Once an English staple, freshwater eels are now a delicacy that here at Weald Smokery we have worked tirelessly to perfect. We select mature silver eels from reputable, sustainable sources, then hot-smoke them over oak. This gives our smoked eels a subtle, yet intense flavour. Smoked Freshwater Eel Salad

Smoked eel sandwiches can be sublime, while the more adventurous will enjoy the dramatic flavour it imparts in a chorizo rich risotto. However, this classic salad, perfect for two, is delightfully quick and easy to make while allowing the eel to star:


  • 100g (4oz) – Weald Smokery Smoked Eel Fillets, flaked
  • 1 – cooked golden beetroot, quartered
  • 1 – medium orange, segmented
  • 2 – medium radishes, thinly sliced
  • 1 – large spring onion, chopped on the diagonal


  • 2tbsp – Extra Virgin Olive Oil
  • 1 tbsp – freshly squeezed lemon juice
  • ½ tsp – Dijon Mustard
  • Pinch – flaked salt and freshly ground pepper

Method for classic smoked eel salad

  • 1. Place the flaked smoked eel fillets in a bowl, add the beetroot, orange and radishes, toss together gently and leave to stand.
  • 2. While the salad is resting, combine the oil, lemon juice, mustard and seasoning and mix well.
  • 3. Pour the oil mixture into a large bowl, add the salad, and gently but thoroughly mix together and serve immediately.

This wonderful salad is ideal served with fresh-out- of-the- oven sourdough or your favourite crusty bread. With an accompanying dry sauvignon blanc, perhaps a Pouilly-Fumé, it can be turned into something altogether special indeed.
