Uniquely Delicious Smoked Trout from Weald Smokery

You may have tried smoked rainbow trout before, but you might not have tasted the smoked trout fillet from the Weald Smokery. A favourite amongst our customers, our trout is sourced from the best suppliers and cooked using a traditional smoking method.

We hot smoke our whole trout over locally sourced oak logs, using a method going back through the ages, in our custom-made kiln. This produces a firm textured flesh with a subtle smoky taste. Rich in omega-3s and additive-free, it is great for you in taste, mind and body.

Smoked Trout Fillets with Peas, Pesto and Pasta

Healthy for the heart and healthy for the taste buds, our smoked trout fillets can be used in a great many dishes, from starters and main courses to sumptuous snacks. This pasta dish is ideal for a family dinner or a lazy lunch with friends.


  • 125g – Weald Smokery smoked trout fillets
  • 175g – Fresh/dried pasta shapes, (Fusilli, Conchiglie or Penne works well)
  • 100g – Fresh/frozen peas
  • 3 tbsp – 0% Greek yoghurt or crème fraiche
  • 4 tsp – Pesto sauce
  • Grind and pinch – freshly ground black pepper and salt flakes
  • 1 tsp – flat-leaf parsley
  • 2 tbsp – pine nuts


1. Cook the pasta in a large, generously salted, pan of boiling water for 9 to 10 minutes.
2. While the pasta is cooking, flake the smoked trout fillets and out to one side
3. Add the peas and cook the pasta for another 2 to 3 minutes (until tender with just the slightest of bite).
4. While the pasta finishes cooking, take a warm ovenproof bowl and mix the yoghurt or crème fraiche together with the pesto and season to taste.
5. Drain the pasta and add to the bowl with the pesto sauce and mix well, over the turned off ring used to cook the pasta.
6. Sprinkle with fresh parsley and pine nuts and serve on individual plates or a large serving platter.

Accompanied with a gorgeous artisan garlic bread and crisp green or seasonal salad, this is a hot smoked trout pasta dish that can be done in minutes.
