Serves 2 as a main course
Ingredients
2 x Smoked Chicken breasts
I bag of salad leaves
Balsamic glaze
Optional – Cooks and Co Sweet Drop Red Peppers, walnut halves, chopped cucumber
Flat breads to serve
Dressing
300g jar cannellini beans (or use a tin of drained cannellini beans)
50g semi-dried datterini tomatoes (in oil)
1/2 tsp crushed chilli or chilli flakes
1-2 tbsp balsamic vinegar
3 smoked garlic cloves (or use 1 normal garlic) crushed
2 tbsp olive oil – plus extra for dressing the leaves
Salt, pepper and a squeeze of lemon for seasoning
Put all the ingredients for the dressing into a food processor, with just a little water, blitz – you might need to add water for the right pouring consistency. Taste, season and pour into a serving bowl, this will keep for a couple of days in the fridge.
When ready to eat toss the leaves in a little olive oil, and arrange on the platter.
Scatter in the cucumber, peppers and walnuts if using. Slice and arrange the chicken across the platter, and drizzle over some of the dressing. Finish with a few stripes of balsamic glaze.
Warm the flatbreads and serve with the rest of the dressing on the side.
