Our artisan smoked trout is sourced from the renowned Bibury Trout Farm in the heart of the Cotswolds. Fed by the crystal-clear River Coln, these slow-grown trout are raised in spring-fed pools, resulting in lean, fresh fish with a clean, delicate flavour.
Before harvest, the trout are purged in pure spring water to ensure exceptional taste. Waste from the farm is sustainably managed – collected and reused by local farmers as natural fertiliser – ensuring nothing enters the river, preserving the pristine environment.
We prepare and traditionally smoke this premium fish with care and craftsmanship, delivering rich, refined flavour in every bite.
