Cold Smoked Trout
Similar to smoked salmon but slightly different in taste and texture, some say more subtle and refined.
Our artisan smoked trout is sourced from the renowned Bibury Trout Farm in the heart of the Cotswolds. Fed by the crystal-clear River Coln, these slow-grown trout are raised in spring-fed pools, resulting in lean, fresh fish with a clean, delicate flavour.
Before harvest, the trout are purged in pure spring water to ensure exceptional taste. Waste from the farm is sustainably managed – collected and reused by local farmers as natural fertiliser – ensuring nothing enters the river, preserving the pristine environment.
We prepare and traditionally smoke this premium fish with care and craftsmanship, delivering rich, refined flavour in every bite.

Cured in a marinade of salt and sugar, with the inspired addition of fresh dill creating its distinctive sweet-and-sour flavour.
Gravad Lax means ‘buried salmon’, and fishermen traditionally did just that, salting then burying their catch on the beach to preserve it over winter.

We take salmon sourced by us from Scotland’s west coast, gently cold-smoke it overnight, then hot-smoke it first thing the next morning. We create our smoked haddock fillets using cold smoke from a fire of oak shavings, and that most precious commodity these days: time.
In fact, our haddock fillets stay in our traditional brick kiln overnight, allowing them to take on a rich, smoky flavour and delicate golden colour gently and naturally.

Craster Kippers
A traditional and trusted method makes this a simple yet delicious tasting fish
Like many English foods, the Craster kipper takes its name from its place of origin – in this case, a small fishing town on the Northumberland coast. The North Sea herrings, known locally as ‘silver darlings’, are cured in brine, then smoked over oak for about 16 hours to produce a deep, smoky taste and a rich, golden colour.

Our duck has a naturally rich flavour, which we enhance further by curing it with our special in-house mix including herbs and bay leaves winning Best Speciality Food Product in South East England at The Great Taste Awards.

Deer are plentiful in the Weald of Kent – vast tracts of it were once royal hunting forest – so venison has been enjoyed here for centuries.
