At the Weald Smokery, we make truly great English cheese even better

Cheddar and Stilton made in their original homelands using traditional methods are truly great English cheeses. We select whole cheeses, and gently cold-smoke them over oak chippings in our brick kilns. Here, the cheese develops a delicate, smoky quality that enhances their distinctive flavours, without altering or overpowering their fundamental character.
